Ingredients:
- 1 medium zucchini grated
- 1 small carrot grated
- 1/2 red capsicum finely diced
- 1/2 cup corn kernels
- 1/4 cup grated parmesan
- 1 tbsp chopped parsley
- 2 eggs
- 1/4 cup chickpea flour
- Olive Oil for frying
Instructions:
Step 1: Squeeze out excess liquid from the grated zucchini & carrot.
Step 2: Mix with the rest of the ingredients and stir until combined well.
Step 3: Fly them off in a large frypan (about 3-4 mins each side) and finish them off in the oven if not cooked through. Enjoy! 🍽
