Mac & Cheese with Pumpkin

Ingredients:

  • 1 Box of spelt macaroni pasta
  • 1 Box of spelt macaroni pasta
  • 2 tbs unsalted butter
  • 2 tbs plain flour 
  • 1 ½ cups of milk, warmed 
  • 2 cups mashed pumpkin 
  • 1 cup grated cheese 
  • 1 pinch of nutmeg 

Instructions: 

Step 1. Simply cook the pasta as per instructions and drain/set aside. 
Step 2. Make the cheese sauce by melting butter over a medium-low heat. Once melted, add the flour little by little and mix. Remove from the heat and add the milk. 
Step 3. Whisk until combined and stir gently till the sauce is thick. 
Step 4. Add the mashed pumpkin and nutmeg and stir until combined. Add the pasta and cheese and WALLAH.
